Filipino food: sinigang

Haven't had Filipino food in a while so I figured I should make some. The flavor for sinigang is mostly from the tamarind mix. You can buy a packet from any Filipino/oriental store. Just pick whatever meat you want with it and boil it in water add vegetables and the mix and your all set. Keep it boiling until the vegetables and meat is cooked.

- Taro Root
- Meat (chicken, beef, pork, or fish)
- String beans
- Green Pepper
- Tomato
- Onion

Mexican Mondays: Breakfast Burrito

I decided to make another breakfast burrito after I saw some being eaten on man vs. food. This one turned out really good since I loaded it with a lot of stuff.

Spac & Cheese

I was craving some Mac & cheese with spam today but I wanted the top layer to have a cheesy crust so I decided to bake it. I first layer the bottom with cooked spam and then add the cooked mac and cheese on top of that layer. You can also add shredded cheese on top of the whole thing to get the cheesy crust on top. Just bake it until the cheese is melted or until you got the crust just the way you want it. I added sirachia (hot sauce) and it ended up really good with it even though it was spicy.

Rice and Chicken Strips

Chicken has been really cheap lately which is why I have so much of it. So I felt like eating some chicken strips for tonight. I just chopped up boneless chicken breast and used shake n bake and I was done. Shake n Bake is really easy just coat the chicken and pop it in the over. I had to have some rice with some chicken so I made some rice to go with it.

Spicy Chicken Chipotle
I felt like eating some pasta so I decided to make spicy chicken chipotle pasta with bacon.This turned out pretty good but it was really spicy.
1) I first cooked the chicken and bacon together and drain some of the bacon fat so it isn't to fatty.
2) Chop some red and green bell pepper. If you don't want it to spicy just chop half of each.
3) Cook the peppers with the chicken until it's tender. Once it's tender add some alfredo sauce and chipotle paste and keep cooking until its hot.
4) add cooked pasta and your done.Ingredients:

- Red Bell peppers
- green bell peppers
- chipotle paste
- pasta
- alfredo sauce.

Chicken Enchilada

Chicken enchiladas are really easy to make. The only difficult part is cooking the chicken. You can buy precooked chicken if your to lazy to cook it and just mix it with salsa or something to give it some flavor. What I did with my chicken was slow cook it in the crock pot for 6 hours with seasoning so it gets really tender and you can pull it off the bone easily.
1) With the cooked chicken, wrap it in a tortilla like a burrito and lay it in the pan. Do this over and over until your pan is full of these wrapped chicken.
2) Dump a can of enchilada sauce evenly on top of the wrapped chicken.
3) Put shredded cheese on top of everything and spread evenly.
4) Bake for 30 minutes at 350 degrees
You can also put some salsa in the filling with the chicken or whatever type of filling you want.
I just made mine with regular chicken and topped it with jalapenos at the end.

Mexican Mondays: Breakfast Burrito


I was craving bacon and egg for dinner so I decided to make a breakfast burrito. I still have some left over asparagus so I added that to it and it turned out very good. The bacon and egg needed more flavor so I added ranch also. The end result was very good and I'll probably make it again in the future.
I was going to add jalapenos but I forgot.
Ingredients:
- Tortilla
- Bacon
- Egg (over easy)
- asparagus
- ranch
